Catering students at Bradford College recently took part in a timed cook-off challenge organised by the Royal Navy. The event aimed to test the students’ culinary skills under pressure, requiring them to prepare two dishes within a 75-minute timeframe using a whole chicken as the main ingredient.
Challenge details and format
The competition followed a format similar to the television show Ready, Steady, Cook!, where participants had to think quickly and demonstrate creativity. Each student was tasked with producing either a starter and a main course or a main course and a dessert. All dishes had to include at least two vegetables and were prepared using ingredients from a well-stocked pantry that included herbs, spices, fresh produce, and flavour enhancers.
Range of dishes prepared
Students created a variety of dishes showcasing different culinary techniques and flavour combinations. Examples of dishes prepared during the challenge included:
- Chicken soups with aromatic spices
- Roast chicken dinners featuring modern twists
- Chicken and leek pies
- Rustic fruit crumbles
- Plated mains with refined presentation
Judging and assessment criteria
The judging panel consisted of Royal Navy personnel, including POCS Nathan Sheldon and Navy Chef Jack Robinson. They evaluated each dish based on four key criteria:
- Presentation
- Flavour
- Creativity
- Technical skill
Both judges praised the students for their professionalism, ambition, and teamwork. They also commended the facilities at Bradford College, noting their suitability for practical culinary training.
Awards and recognition
Two main awards were presented at the end of the competition:
- Best Teamwork – recognising effective communication, organisation, and collaboration under pressure
- Best Dish – awarded to the student who produced the most balanced and flavourful plate
